Your Favorite Cajun Recipe?

I absolutely love Cajun food! Given a choice between Cajun food and all of the other types of food in the world, I would choose Cajun! That is no exaggeration. When we moved up to Alaska for a bit, we missed the South Louisiana food more than anything. The Yankees have some pretty good food, but they have no clue about seasoning it.
My favorite Cajun recipe is this one that we dug up for Crawfish Etouffee. It’s hard to cook anything with crawfish that I won’t love, but this one goes above and beyond the call of duty. It takes a bit to prepare it correctly, but the reward is fantastic!
