Cajun Potato Salad Recipes

Cajun potato salad is so much better than plain old potato salad! If you haven't tried it yet, just imagine a potato salad that actually has some kick to it. Get the point? Cajun potato salad goes well with just about every meal. Even though this may not be a traditional Cajun food, it has become one around our house.
I like just about anything that is spicy. Maybe that's why I love Cajun potato salad recipes. They really are good. Once you get bored with any regular recipe, you can always just add a bit of Cajun seasoning to it to spice things up. We hope you enjoy these Cajun potato salad recipes. "Cajun Potato Salad"
Ingredients:
- 2 lbs. of red potatoes, cut into quarters, and peeled if you prefer
- 2 teaspoons of salt
- 7 boiled eggs
- 1/4 cup of vegetable oil
- 1 teaspoon of vinegar
- 3/4 cup of mayo
- 1 teaspoon (or more) of Tabasco
- 1 chopped up sweet pickle
- 1 stalk of celery chopped up
- 1 small green bell pepper chopped up
Instructions:
- Fill a pot half way with water and bring it to a boil.
- Add your potatoes and salt and cook them for about 15 minutes.
- Drain the water out of the pot.
- Add everything to a bowl and mix it well.
- Refrigerate for at least an hour before serving.
- Top off the pan of potato salad with some red pepper for color.
