Couche Couche Recipes

Couche Couche is a classic Cajun food that can be spelled at least three different ways: couche couche, couch couch, and cush cush. No matter which way you decide to spell it, couche couche really is a unique Cajun treat. For generations, this Cajun food was a staple on dinner tables. Now it's your turn to give it a try. While it was traditionally eaten as a Cajun breakfast like a hot cereal, it can be eaten at any time. It can be compared to a fried cornmeal mush, but it's really a lot better.

Couche Couche
Ingredients:
- 2 cups of yellow cornmeal
- 1/4 cups of vegetable oil
- 2 teaspoons of salt
- 1 teaspoon of baking powder
- 3/4 cups of milk
- 3/4 cups of water
Instructions:
- In a heavy pot, heat the oil on high.
- In a separate bowl, mix the cornmeal, salt, and baking powder.
- To that bowl, add the milk and water and stir.
- Pour the batter into the hot oil.
- Allow the batter to form a crust on the bottom.
- Reduce the heat to low and stir.
- Cook for an additional 15 minutes, stirring occasionally.
- Serve in a bowl with milk and sugar.
